INGREDIENTS
80 oz fresh ginger root (2 pcs, each about 10 inches long)
2 cups water
2 cups sugar

DIRECTIONS
1. Peel the ginger root with a vegetable peeler, and cut into thin rounds.
2. Bring the sugar and water to a boil over medium high heat.
3. Add the sliced ginger and bring the mixture back up to a simmer.
4. Remove from heat and allow to steep for at least 30 minutes.
5. Strain syrup through fine mesh. Discard ginger.
6. Syrup keeps for a month refrigerated in an airtight container.

Pink Millenium Cocktail

Indgredients:
2 oz vodka
2 oz cranberry juice cocktail
1 oz ginger infused simple syrup
Champine, to top off glass

How to make:
1. Ginger simple syrup recipe in up
2.Make sure all ingredients are well chilled.
3. In a champagne flute or martini glass, combine the vodka, cranberry juice cocktail and simple syrup.
4. Add champagne to top off glass.
5. Garnish with a few fresh cranberries, if desired.
